Vanilla Cupcake recipe

One of our favorite recipes, cupcakes with a vanilla twist to create a tasty treat.

Sponge Ingredients (this recipe makes around 12 cupcakes)

2 free-range organic eggs
120g Caster Sugar
120g Self-raising Flour
150g Butter
half tsp Vanilla extract
100g of chopped pineapple
Half a teaspoon of vanilla extract
Finely grated zest of 1 lemon or orange

Let's get started!

  1. Preheat over to 170C/325F.
  2. Prepare your cupcake tin with cases.
  3. Beat together butter, sugar and eggs.
  4. Add vanilla extract.
  5. Gradually add the flour into the mixture.
  6. Carefully divide your fluffy mixture into the cake tins.
  7. Bake for 15 minutes or until golden.
  8. They look great! Leave to rest on the side for 15 minutes.
  9. Decorate your cake!
